Peanut Butter and Jelly Pancakes


I have to share this fantastic recipe for Peanut Butter and Jelly pancakes. It is from the Southern living cookbook. It is super easy but tastes very gourmet. I also like it because it uses up old bananas. Here is a little tip: If your bananas are past their prime don't throw them away just throw them in the freezer peel and all. When you need one just throw it in the microwave for about 30 seconds or until it is soft enough to squeeze. Cut the end off and squeeze it out like a tube of toothpaste.


Peanut Butter and Jelly Pancakes
2 cups all purpose baking mix *I make my own see below for my recipe
1 Cup Butter Milk (You can substitute 1 TBS lemon juice plus enough milk to make one cup, let is stand for a few minutes and then continue as directed
1 cup mashed banana
2 Large Eggs
1/2 tsp Ground Cinnamon
3/4 cup Maple Syrup
1/4 Peanut Butter
1/2 strawberry Jam
1. Whisk together the first five ingredients until just moistened
2. Heat a griddle or skillet over medium heat until hot. Pour about 1/4 of the batter on to the griddle. Cook until the edges are set, flip and cook until it is done.
3. Meanwhile whisk the peanut butter and syrup together until blended.
4. To assemble spread about 1 TBSP jam between two pancakes, top with more jam and add one more pancake and then pour the syrup on top. They are so rich and yummy and they don't even have oil in them!
*this is how I make my own bisquick. You can use it exactly the same.
4 cups flour
2 Tablespoons baking powder
1 cup Shortening
1 1/2 Tsp salt
Combine all of the ingredients and mix until it is thoroughly mixed. You can store it up to 6 months.
