MMMMM-Strawberry Rhubarb Jam
I wanted to share a super yummy and simple recipe for Strawberry Rhubarb Jam, because my sweet cousin asked for more recipes. We love this jam so much half the time it doesn’t even make it to a sandwich. It goes straight from the spoon to our mouth. In fact I am going to go eat that sweet, yummy spoonful that you see here. Insert Homer Simpson drooling sound. Shhhh don’t tell the kids I am an adult and I don’t care if dinner is only an hour away!
It is so simple it only requires 3 ingredients.
Strawberry Rhubarb Jam
Ingredients
- 5 cups chopped fresh rhubarb
- 3 cups white sugar
- 1 (3 ounce) package strawberry flavored gelatin
Directions
- In a large saucepan or stockpot, stir together the fresh rhubarb and sugar. Cover, and let stand overnight.
- Bring the rhubarb and sugar to a boil over medium heat. Boil, stirring constantly, for 12 minutes on low heat. Remove from heat, and stir in dry gelatin mix. Transfer to sterile jars, and refrigerate or process for canning.
If you have never tried canning it really is super easy and it is so nice to have yummy things from your garden all year long. You can also make really inexpensive gifts for neighbors and such for the holidays.
